Not Your Standard Meatloaf

Letting you guys know, this is NOT your standard ass meatloaf. I cannot stand the taste of condiments (ketchup, mustard, mayo...). Also, Clayton and I love the taste of onion, but the chunks. Clay also hates chunks of garlic also...

So, I took my parent's recipe's, and made it my own. Clay loves it, and I love the Italian seasonings in it! 
So...here ya go!

My Totally Awesome Meatloaf!

Ingredients

  1. Ground beef (80/20 chuck is best)
  2. A huge can of Tomato Sauce
  3. Oregano (dried)
  4. Basil (dried)
  5. Italian Seasoning Mix (in a container, it has rosemary)
  6. Salt/Pepper
  7. Italian Breadcrumbs (binder)
  8. {optional} Egg
  9. Parmesan/Romano Grated Cheese
  10. Garlic/Onion Powder (or the regular...1/2 white onion chopped to tiny pieces and 3 cloves garlic smashed and minced
Directions
  • Preheat your oven to 375 degrees
  • Combine ALL the ingredients with your meat in either a bowl or the baking dish, (find it a easier clean up if you mix it in the pan.) The pan must be a casserole glass dish. I just find the meatloaf cooked better in one.
  • Only pour 1/4 of the tomato sauce in the mix. Add as much of the ingredients in the meat as much as your tasting. The cheese, use 1/4 of your desired amount. It will make it too salty!
  • Don't be a wuss and use a spoon to mix it. USE YOUR HANDS, and get in there and mix it until all the ingredients are mixed.
  • Get fancy...or not... and shape the mixture into a loaf of some kind.
  • Using your fingers, poke 3 rows of three holes in your meat.
  • Pour the remainder of the tomato sauce into the holes and all around the loaf itself. Spread the sauce evenly.
  • Take some dry oregano to your palm of your hand and rub on top of the loaf, if desired. 
  • Top the whole thing, as much cheese as you want.
  • Place in the oven, it takes generally 45-60 mins to cook
  • Once finished, let sit for 10 mins.
