Letting you guys know, this is NOT your standard ass meatloaf. I cannot stand the taste of condiments (ketchup, mustard, mayo...). Also, Clayton and I love the taste of onion, but the chunks. Clay also hates chunks of garlic also...
So, I took my parent's recipe's, and made it my own. Clay loves it, and I love the Italian seasonings in it!
So...here ya go!

My Totally Awesome Meatloaf!
Ingredients
- Ground beef (80/20 chuck is best)
- A huge can of Tomato Sauce
- Oregano (dried)
- Basil (dried)
- Italian Seasoning Mix (in a container, it has rosemary)
- Salt/Pepper
- Italian Breadcrumbs (binder)
- {optional} Egg
- Parmesan/Romano Grated Cheese
- Garlic/Onion Powder (or the regular...1/2 white onion chopped to tiny pieces and 3 cloves garlic smashed and minced
Directions
- Preheat your oven to 375 degrees
- Combine ALL the ingredients with your meat in either a bowl or the baking dish, (find it a easier clean up if you mix it in the pan.) The pan must be a casserole glass dish. I just find the meatloaf cooked better in one.
- Only pour 1/4 of the tomato sauce in the mix. Add as much of the ingredients in the meat as much as your tasting. The cheese, use 1/4 of your desired amount. It will make it too salty!
- Don't be a wuss and use a spoon to mix it. USE YOUR HANDS, and get in there and mix it until all the ingredients are mixed.
- Get fancy...or not... and shape the mixture into a loaf of some kind.
- Using your fingers, poke 3 rows of three holes in your meat.
- Pour the remainder of the tomato sauce into the holes and all around the loaf itself. Spread the sauce evenly.
- Take some dry oregano to your palm of your hand and rub on top of the loaf, if desired.
- Top the whole thing, as much cheese as you want.
- Place in the oven, it takes generally 45-60 mins to cook
- Once finished, let sit for 10 mins.
